Recipes That Bring A Taste Of Sunny Provence Into Your Kitchen

I live in London, but in an area full of trees. There’s even a wood at the end of my road. It’s not Aix-en-Provence – there are no honey-coloured shuttered houses – but as soon as the ground gets hot, as it has recently, the area has that summer smell of warm earth and holidays.

As I walk down the road with my children, we sniff the air, trying to work out which plants are creating this Mediterranean vibe. I open the back door on to the garden and start cooking as if I live somewhere else. I want thyme, rosemary and oregano, and long for the strong flavours that say ‘summer’.
